AKITA SAKE Akitabare Koshiki Junzukuri (Northern Skies) 300ml

Koshiki Junzukuri means “old style, pure process” which perfectly sums up this sake as it is brewed using tools that are a hundred years old. It’s a Junmai style sake, made from Gin no Sei rice that’s polished to a 65% ratio using yeast Akita Konno No.12. On the palate, there are nutty, savoury notes with a hint of umami and a light dry texture. A hint of fruit peeks through but the local crisp and rich style dominates. A wonderful companion with seafood and light vegetable dishes such as tempura, it’s also a fantastic partner to spicy appetisers. Serve chilled or warm, but never over ice.
Akitabare is a sake brewery based in the Akita Prefecture on the northwest of Honshu. They work towards keeping old ways and traditions; within the brewery, they use the same wooden basin for rice soaking, and the same rice steamers that were used at the brewery a hundred years ago. Akitabare produce refined pared-down sakes that are less floral and more finesse.
