Bird in Hand – located on an old gold mine in the Adelaide Hills – was born in 1997 and has developed a strong cult following. It isn’t hard to see why when you taste their Sparkling 2020. This predominantly Pinot Noir fizz is packed with strawberries and cream fresh cherries red apples baker’s yeast and white flowers. Jancis Robinson once highlighted it as a “good value” sparkling rosé for “those in search of a bargain who find most Champagne too tart… the light fizziness and strong Pinot perfume is well judged.” And just look at that piccolo bottle it couldn’t be cuter. A Bird in Hand is good but two in the fridge is better.
