The Signature Style Gin from In the Welsh Wind Distillery is inspired by Ceredigion’s maritime past and the culinary innovation it sparked. Ships built from Welsh oak would sail around the Iberian coast bringing back spices teas and fruit to the kitchens of Wales. That would give rise to delicacies such as bara brith and Welsh cakes. In homage to them the gin is crafted in small batches using orange and lemon ribbons nutmeg clove cassia bark (a close relative of cinnamon) galangal (for that gingery hit) and currants soaked in Earl Grey tea. There’s also juniper coriander bay leaf and orris root in the mix producing a rich oily and full-bodied gin bursting with notes of marmalade pine dried fruit fiery spice and tea tannins. Although great in all seasons for us this has a decidedly autumnal and wintry feel to it. One to stock up on for the colder months and consider mixing it into a fabulous Negroni a Martini with real oomph a gin and tonic or any classic cocktail.
In the Welsh Wind Distillery can be found in a repurposed cow shed on the wild west coast overlooking Cardigan Bay. Using two copper pot stills called Meredith and Afanc they create award-winning gin bespoke spirits and pioneering grain-to-glass Welsh whisky.
