• 1 x Chimay Première Trappist Ale 330ml 7% – Known as Chimay Red by its English-speaking friends this coppery ruby-coloured ale tastes like a melange of orange peach apricot nougat toffee and malted milk biscuits. A gentle bitterness in the tail makes it an extremely food-friendly beer and the fruitiness plays with cheese almost like chutney. First brewed in 1862 it’s the oldest of Chimay’s beers making it a great place to start.
• 1 x Chimay Triple Trappist Ale 330ml 8% – A.K.A. Chimay White this is a majestic ale that pours with a regal crown of white froth. Rich and fruity it goes beautifully with cheese – the stinkier the better. Expect tangy marmalade red apple bitterness sweet vanilla malt gentle smoke and velvety mouthfeel.
• 1 x Chimay Grande Réserve Trappist Ale 330ml 9% – Commonly called Chimay Blue this is an iconic and potent Belgian beer. Although these Cistercian Trappist monks have been brewing for over 170 years Chimay Blue was first created as a Christmas beer in 1954 and has quickly become one of the most famous and loved brews in the Chimay range. Dark warming and it ages wonderfully improving and gaining complexity with time. As a result there’s no rush to gobble this particular beer down which is why we recommend letting its fruity Port-like aromas spices and intense notes of dark chocolate caramel and coffee develop for a while. Wheel out the blue cheese for this one.
