Copenhagen Distillery is a truly Unique Urban Craft Distillery, believing that distillation is more than just the process of combining ingredients; it is an intersection of art, craft and science, and we must say that we believe them.
Their methods of production would be considered madness by a lot of other distillers. This is not production designed to make the optimum yield in the most efficient way, this is production designed to take the very best of the distillate and make that into their whisky. This means that the final result is a smooth, complex and full flavoured whisky. The small nature of their production also means that they have as much control as possible over their production, letting the barrels be affected by real weather fluctuations, and causing a rapid aging process.
This particular whisky is bottled exclusively for Harvey Nichols and is part of the 'Rare' range which is made using interesting experimentation and innovation. These aren't your classic whiskies, and in our case this whisky has been matured in Danish Aquavit casks, which lends itself to giving beautiful herbaceous notes.
A dark heather honey-coloured whisky presents distilled notes of caraway, fennel, sweet citrus, honey, grain, and oak. Scandinavian caraway flavours, light hints of anise, dried papaya, and green leaves gently merge with vanilla, white pepper, and cloves, creating a lightly viscous, oily, well-balanced single malt. The finish elegantly offers a pleasant dryness from oak tannins, heather honey, cedar tree, and leather.
