Full maturation in ex-peated quarter casks from Scotland has added a subtle smoke to Cotswolds award-winning Single Malt which has picked up Best English Single Malt at the World Whiskies Awards two years running.
Cotswolds Peated Cask is opens with dried tropical fruits and spice fanning out into fresh orchard fruit and freshly hewn oak and then wrapping up in style with a long lingering finish of runny honey dried flowers and gently smoking bonfire embers. Made in small batches this incredible whisky never hangs around for long.
The Cotswold Distillery may have been producing incredible gin over the last few years but their much-anticipated whisky is the talk of the town. The first casks were laid down in 2014 with help from Harry Cockburn (the former Distillery Manager at Bowmore) and the late Dr. Jim Swan (a celebrated whisky maker described as “the Einstein of whisky” and who was instrumental in setting up a raft of great distilleries including Kavalan Penderyn Kilchoman Victoria Caledonian and Milk & Honey). Their Odyssey Barley is grown on farms in the Cotswolds and is traditionally floor-malted at the Warminster Maltings. This is slow-fermented with Anchor and Fermentis yeasts and local water before being distilled in bespoke copper pot stills. So what you find in this bottle is a sensational snapshot of the rolling hills clean air honey-coloured stone busy farms and bustling market towns of the Cotswolds.
