The Cotswolds Distillery have aged this in premium first-fill ex-Bourbon barrels and shaved toasted and re-charred (STR) American oak red wine casks. The latter were designed specifically for this distillery by the late Dr. Jim Swan – a celebrated whisky maker described as “the Einstein of whisky” and who was instrumental in setting up a raft of great distilleries including Kavalan Penderyn Kilchoman Victoria Caledonian and Milk & Honey. The Cotswolds Signature Single Malt Whisky is phenomenal. It’s creamy like vanilla custard marzipan and porridge swirled with strawberry and rhubarb jam; summery with orange lemon grass and wildflowers; savoury with notes of treacle malt and wood; and then finally there’s something of Sauternes with its honey marmalade peach apricot and shortbread notes. A great all-rounder to have in the collection this can be sipped neat topped up with ginger ale or mixed into cocktails. 

The Cotswold Distillery may have been producing incredible gin over the last few years but their much-anticipated whisky is the talk of the town. The first casks were laid down in 2014 with help from the aforementioned legend Dr. Jim Swan and also Harry Cockburn – the former Distillery Manager at Bowmore. Their Odyssey Barley is grown on farms in the Cotswolds and it’s traditionally floor-malted at the Warminster Maltings – Britain’s oldest working maltings. This is fermented with Anchor and Fermentis yeasts and local water before being distilled in copper pot stills called Mary and Janis. So what you find in this bottle is a sensational snapshot of the rolling hills clean air honey-coloured stone busy farms and bustling market towns of the Cotswolds.
