This small but impressive farm distillery is owned and operated by the Cuthbert family, producing whiskies in the quieter periods and only in small cask numbers. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland Whisky. With a strong emphasis on locality, renewables and sustainability, there isn’t much that goes to waste. A nearby brewer provides Daftmill with its spent brewer's yeast, used grains from the mash are fed to the farms cattle and distillation leftovers are spread on the fields as fertiliser. Water is sourced from the estates own spring and aside from Scottish made copper stills, most other things are produced or sourced within 5 miles of the farm – this really is an incredibly resourceful and self-sufficient distillery. 

Now back to the whisky. With only 13 casks to this limited bottling of first fill ex bourbon barrels distilled in January or August 2007, made with farm grown ‘Optic’ barley, this enticing Lowland expression brings forth notes of apricots, vanilla, custard and cardamom with a delightfully creamy undercurrent. The palate continues with further creaminess invoking crème brûlée and Werther’s Originals with peach, orchard fruit and a light pepper developing towards the finish. Buttery shortbread notes linger on the palate of this delightful 15-year-old expression leaving you with rich, gentle and complex memories of a fine Lowland whisky. With so few casks in this limited batch, you will need to be quick off the mark to get hold of one.
