“A mentholated top note is present on the elegant cool and airy aromas of red Pinot fruit that is laced with plenty of earth elements. There is excellent vibrancy to the beautifully delineated medium weight flavours that culminate in a dusty serious and sneaky long finish. Pommard is a large and often overlooked appellation possibly because there are no Grand Cru sites and some of the wines can be a little hard and powerful. However there are no such issues with ‘Tavannes’ from Fernand & Laurent Pillot. This is a broader and rounder style with a sweeter richness than most. Dark blackberry is lightened by the tang of raspberry damson and cherry and it’s shot through with toasted coconut spice rosemary dried mint and iron. This has the legs to run for many years but it’s drinking beautifully now and will pair with anything from pâtés and terrines for lunch to rich game dishes and roast pork at dinner parties.
Clearly a man who knows how to multitask when Laurent Pillot isn’t making this wine or taking care of his family you might find him flying his microlight or his hawks or maybe even conducting the local brass band. He recommends that you can enjoy this wine “anytime during the day or night” we suppose that if you’re as busy as he is you may have to keep some unusual drinking hours!
