Cantina Filippi’s organic and biodynamic Soave Castelcerino comes from 70-year-old Garganega vines grown on volcanic soils in the Colli Scaligeri area of Verona. Despite the low sulphur use and natural winemaking, it doesn’t have the funkiness you might have been accustomed to with that style, it’s as clean and pure as they come. Orchard blossom, green apple, crisp grapefruit, pear, fresh herbs, almond and bread yeast all come together, leading to a long, mineral finish. This is a perfect partner to all those difficult greens beginning with an ‘a’ (asparagus, avocado and artichoke), not to mention seafood, quiches and lightly spiced dishes.
