Produced via the Vin Gris method using the indigenous red varieties of Grenache and Cinsault this Corbières Rosé is a wonderful salmon-pink colour the nose is graced with subtle engaging notes of dried flora red fruit and mixed herbs leading to understated flavours of raspberry ripple strawberry shortcake and an assortment of regional spices. Delicious on its own this versatile rosé is also the perfect accompaniment to lightly flavoured shellfish poultry salads pasta dishes and summer days.
Located in the heart of Boutenac one of the best sub-regions of Corbières the revered estate of Château Ollieux Romanis farm all their vineyards organically and sustainably. The property has been in Pierre Bories’ family for over 150 years but wines have been produced in the region since Roman times. In recent years they have moved towards a more natural wine approach focussing on indigenous yeasts minimal sulphur and organic compost made from leftover grape skins to allow their exceptional terroir to really shine.
