The Hearach, the Gaelic phrase for someone from the Isle of Harris, is the first legal whisky from the Isle. Woven from people and place, the whisky truly reflects the best of the island and those local men and women who make it. The whisky is made using soft Outer Hebridean waters from the Abhainn Cnoc a ‘Charrain, which runs over the oldest rocks on earth, and 100% Scottish Concerto barley. After long fermentations and hands-on distillation in bespoke copper stills, it is then matured for a minimum of 5 years in a combination of first-fill ex-Bourbon casks and Oloroso and Fino sherry butts. It’s lightly peated at 12-15ppm, presented at 46% free from chill filtration and at natural colour.
Isle of Harris invites drinkers to explore the scents and sensory experience of The Hearach single malt from a more personal point of view, suggesting that the elegant flavours will be perceived differently by different people and, if allowed, each drinker will delve a little deeper and find their own unique taste that’s full of complexity and character as the dram unfolds in their glass over time.
The lightly peated dram is full of character, complexity and balance. It’s rich with notes of peat smoke on the first sip calling forth burning bonfires on the beach, followed by apple crumble, toasted hot cross buns and summer flowers. Glorious mixed spice nuances appear with old fashioned sweetness of candied ginger, vanilla and honeycomb and finally the finishing palate has long clotted creamy notes and a lasting sense of new leather.
Each batch of The Hearach is made to the same recipe but there are subtle variations between each which reflect the casks used and the length of time 'married'. Each bottle will be accompanied by tasting notes from a local islander and a short story from Harris written at the time of bottling. So, sit back, pour a dram and immerse yourself in a sense of quiet ceremony and appreciation for the Isle of Harris.
