Those who know their juniper-based spirits will of course be aware that Old Tom Gin harks back to a time when gin was more richly flavoured and had a touch of sweetness. It’s often considered the bridge between Dutch Jenever and London Dry. Hayman’s version is very Victorian packed with sweet citrus like a lemon posset and a refreshing hit of pine and juniper. A wonderful drop sipped with tonic water and a side of oysters cockles or fish and chips or we love it mixed into a Martinez – a cocktail that was born around the same time as Hayman’s. Coincidence?
