This beautifully boxed little bottle contains precious liquid gold. Icewine is almost impossible to make; the grapes are left to freeze on the vine so that the water can be separated from the sugars before fermentation resulting in a sweet wine of incredible sorbet-like fruit clarity.
Henry of Pelham’s Vidal Icewine is a perfect example; tangy piquant and bursting with pineapple mango and ripe peach. Serve with sorbet fruit tarts tropical fruit pavlova or a lavish cheeseboard.
In 1794 Nicholas Smith set up a small farm not far from Niagara Falls on the Canadian side of the border. His son Henry built a tavern and jokingly signed his liquor license “Henry of Pelham” in reference to a former British prime minister. The name stuck but more importantly so did the vines that he planted on his Dad’s farm.
Many generations later the winery in the Short Hills Bench sub-appellation of the Niagara Peninsula is going strong and is still run by the same family. They helped to set up the Vintners Quality Alliance – Canada’s equivalent of France’s AOC and Italy’s DOC systems – and they are certified sustainable by the Wine Council of Ontario. Run by the three Speck brothers Henry of Pelham is one of Canadian wine’s rising stars.
