When Peter Sisseck releases a new wine the world stops and takes notice. Fino Sherry is one of the world’s best kept secrets but it may remain that way for long now that the creator of Pingus has bought a bodega in Jerez. Calling the move “a dream come true” the legendary Danish winemaker acquired Bodega San Francisco Javier with Carlos del Rio González-Gordon of González Byass fame. Now that’s some team and some provenance. So it came as no surprise when the first release in 2020 was awarded a massive 96 points by Robert Parker’s Wine Advocate one of the highest ever scores for a wine of this kind. This is the highly anticipated follow-up.

Peter Sisseck noticed that all of the world’s most important wines have a sense of place yet nobody in Jerez was making vineyard-designated Fino Sherry. That’s why the grapes that go into Viña Corrales come from an eight-hectare organic plot called Pago Balbaína located in highest area of Jerez overlooking the sea. Saca 2021 is a bottling drawn from the Camborio solera and has an average age of nine years. It was bottled “en rama” meaning “from the branch” the idea being that this is Sherry in its rawest and most natural form straight from the barrel with no filtering or fining. For us this is the finest way to drink Sherry and it also tends to make it vegan friendly which is a bonus.

Viña Corrales pours a lemon-gold colour. The aromas are fresh and powerful with notes of lime peel candied orange hay Mediterranean herbs chalk seaweed chamomile sea spray and yeast. That yeastiness from the flor comes back on the palate with more straw marzipan olive brine celery lemon breadcrumb hazelnut linseed oil a hint of farmyard and a tang of salty cheese. This is a seriously serious Fino to be paired with rich dishes and only the finest tapas.

Danish winemaker Peter Sisseck’s Pingus revolutionised Spanish wine placing it right up there alongside the Super Tuscans and Bordeaux’s First Growths. Before it Ribera del Duero was known for little more than mass-produced reds Vega Sicilia being the only notable exception. But Pingus changed all of that shooting to fame in 1995 when Robert Parker described the Grand Vin as probably “the greatest young red wine I have ever tasted from Spain.” A huge proportion of the 325 cases of that vintage were lost when a ship carrying them to the US sank near the Azores. This rocketed the demand for what remained into the stratosphere and the rest – as they say – is history. The cult Pingus is seen by many as the pinnacle of what can be achieved with Tempranillo. Now it looks like he has big dreams for Sherry country with Viña Corrales. Expect a revolution in Jerez and Fino to be the next big thing.
