Sipsmith was the first London Distillery to be opened in over 100 years. Two childhood friends, Fairfax Hall and Sam Galsworthy, had a belief in doing things properly. So, they created the first traditional copper distillery in London since 1820. Everything is handcrafted, there are no machines making decisions on the cut timings, just the distiller’s art. Their three stills – Prudence, Patience and Constance – gleam in copper excellence as they create some of the finest gin on the planet. These are then reduced to bottling strength using the pure water of Lydwell Spring, a source of the River Thames. It may be relatively new, but Sipsmith has quickly become a classic.
