Château de la Marquetterie sits in the heart of the Champagne wine-growing region in Pierry not far from Epernay. The acquisition of this property and the surrounding vineyards known as “Les Folies” marked the commencement of the family’s Champagne adventure. So in honour of where the Taittinger story began they created Folies de la Marquetterie a blend of 55% Pinot Noir and 45% Chardonnay sourced from their own vineyards surrounding the family home. The wine comes from a single year but the vintage isn’t declared so it’s bottled as a non-vintage Champagne. This makes it a bit of a steal when compared to the vintage expressions from Taittinger’s peers. Even more so when you learn that some of the plots are aged in oak and the wine spends five years on the lees (the spent yeast that gives quality sparkling wine its nutty yeasty and bready flavours). Pour this golden wine and taste as the delicate stream of creamy bubbles burst with intense notes of toasted brioche peaches roasted in butter ripe pear apricot jam red summer berries vanilla marmalade orange blossom smoke chalk and beach pebbles. With a flavour profile like that this is one of our favourite breakfast Champagnes but it also pairs beautifully with rich dishes creamy sauces and pasta with shellfish. 

Taittinger’s vineyards date back to 1734 and were owned by Jacques Fourneaux. The château was bought by Pierre Taittinger in 1932 and the business prides itself on being one of the last remaining independent family-owned Champagne houses run by the name on the label. This vegan-friendly Champagne is one of those hidden gems enjoyed by those in the know.
