This is the kind of sake you should expect to see in every serious sushi restaurant. Dry, sharp and smooth, Tedorigawa Yamahai Junmai Silver Mountain Sake is rich and bold with lots of action that wakes the palate and brings a slight sharpness that becomes more addictive with each sip. It’s Junmai in style, made from a blend of Yamadanishiki and 500 Mangoku rice that’s been polished to a 60% ratio using a house yeast strain. The generous flavour profile brings forth hazelnuts, stone fruits, floral nuances, cocoa nibs and a sprinkling of mushroom umami, while the palate is robust with a hint of floral sweetness for a smooth and elegantly balanced finish. It’s the ultimate crowd pleaser and a versatile sake that can be enjoyed both hot and cold.  

The name Silver Mountain is a reference to the source of its hard water used for brewing. This water is from Mount Haku, where the water takes 100 years to filter through. 

Tedorigawa Sake is produced at the Yoshida Sake Brewery in Ishikawa Prefecture on the northern tip of the central part of Honshu Island. The brewery produces sakes of fuller flavour, moving away from light and dry styles. Tedorigawa sakes are known for elegance, complexity and a milder taste profile.
